The Hérault stacks three landscapes into fifty kilometres. The coast first, from Agde, Palavas-les-Flots or La Grande-Motte: sand bars, lagoons, flat walking between sea and lagoon, with flamingos for company.

Then the garrigue, as soon as you leave the shore. Cazevieille is the classic start for the Pic Saint-Loup, an unmistakable silhouette whose climb is short but genuinely steep. Around it: holm oak, thyme and dry-stone walls.

Finally the Hérault gorges, with Saint-Guilhem-le-Désert as the highlight — the abbey of Gellone, the Pont du Diable, and the Arles route to Compostela passing through. This is where the department finds its climbing, up towards the edge of the Larzac.

When to go — Autumn, winter and spring are the best seasons; in summer the garrigue bakes and access to some massifs is restricted for fire risk — check the prefectural order before setting out.
