It all happens along one escarpment. The vineyard escarpment, from Fixin through Nuits-Saint-Georges to Beaune, forms an unbroken line where vineyard stops dead against forest: the Climats of the Burgundy vineyards, a World Heritage site, read clearly from the trails along the top of the slope.

Behind that line open the Hautes-Côtes and the combes — dry valleys cut into limestone, often wooded, where the climbing arrives all at once. The Combe Lavaux above Gevrey is the best-known example.

To the north, Dijon and Talant give onto the Ouche valley and the Burgundy canal, for gentler, more urban walking. The GR7 crosses the department from north to south.

When to go — Spring and autumn are the best seasons, autumn especially for the vineyard colours after the harvest; summer stays hot and dry in the combes.
